ETHIOPIA YIRGACHEFFE is excellent high-altitude coffee with fragrant flowery notes, sweet spicy lower notes, and a unique distinctive full body taste. These beans are widely considered to be the finest of Ethiopian coffees. These beans have a great roast range from light to dark with excellent flavor. PROCESSING the washed processing produces what is termed as clean cup. The benefit of clean cup is it allows the acidity in the coffee to really shine. The wet processing involves first washing off the coffee cherry's fleshy or fruity pulp right after harvest then remaining mucilage is removed through a fermentation process, after which the beans are carefully dried using natural sun light and forced air, reducing moisture to 10.5% which is best level coffee storage. ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly. As heat is applied the beans will change in color from green to yellow, to ever darkening shades of brown, once the roast level desired is achieved beans are cooled quickly.
