MEXICAN specialty-grade unroasted green coffee beans from the region of Chiapas, Mexico. This coffee is Arabica beans 100% shade-grown, naturally cultivated, and is processed and exported by indigenous coffee growers from the Cascada Jaltenango Community Grower Group of Farms. These farmers grow plant varietals of Typica, Bourbon, and Mondo Novo. The grade is Strictly High Grown and it is certified organic, rainforest alliance and fairtrade. The processing method is washed then sundried. Average farm altitude is 1,200-1,400 meters. Cupping notes are subtle spiciness, peach, berry, with chocolaty body. ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly. As heat is applied the beans will change in color from green to yellow, to ever darkening shades of brown, once the roast level desired is achieved beans are cooled quickly.
