ETHIOPIA YIRGACHEFFE NATURAL is an excellent high-altitude coffee with fruity cup notes of Strawberry, Kiwi, Blueberry, and Apricot. It is juicy and tangy in the cup. It was grown in the prime coffee growing region of the Ethiopian Highlands 1,770-2,200 MASL (5,577-7,218 ft) where the soil and climate produces some of the most excellent coffee. These farmers use the Indigenous Heirloom Cultivars of Arabica coffee that originally made this region famous. This coffee was processed in the traditional Natural Process meaning the cherries are dried with the pulp still attached. This gives the coffee much more distinct berry and fruity notes in the cup, it also mellows out some of the high acidity usually associated with the washed process coffees from this region. ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly. As heat is applied the beans will change in color from green to yellow, to ever darkening shades of brown, once the roast level desired is achieved beans are cooled quickly.
